In order to obtain high-quality fried potato chips, increase the product yield and reduce the cost, we must choose potato raw materials in line with the technical requirements. In general, raw materials are required to have regular tubers, uniform size, shallow bud eyes but few, high content of starch and dry matter, and low content of reducing sugar, which should be less than 1%. If the reducing sugar content is high, it is easy to brown when fried.

 

Because potato chips are sliced from fresh potato, they come in the different shape and size, therefore, the packaging forms of potato chips is nitrogen gas filled bag packaging.
